Feta and bacon stuffed chicken

I know what you’re thinking…

Looks a little toasty.

Well, you’re right. That was my initial thought when pulling this out of the oven. I was pretty mad. I thought I ruined dinner. But I put it on the plate anyway and served it as if nothing was wrong.

Well it just so happened that it did not TASTE burnt at all! * Hallelujah chorus* It tasted pretty darn good, in fact!

But let’s be honest, anything with bacon in it is going to taste good, am I right? I could eat bacon all day everyday. It’s just one of those foods that I never get tired of. Whenever my father-in-law makes breakfast at the lake there is usually leftover bacon. Now I could eat all of it at once. (But that would be embarrassing) So what do I do? I sneak pieces when no one is looking. Slowly. Methodically. Until “I guess I’ll eat the last piece of bacon!” (Still embarrassing)

ANYWAY, back to dinner! Chicken is so plain so I like finding different recipes to see what combinations of flavors go well together. Feta and bacon? 10 out of 10. Chicken stuffed with feta and bacon with those two ALSO on top was super yummy and a keeper for the future.

Today’s lesson: Keep an eye on the food in the oven so it doesn’t look scorched…

Slow Cooker Angel Pork Chops

Here are two things I know.

#1: I have never made pork chops before.

#2: I like food made with cooking wine.

SO, when I found this recipe I thought “What’s the worst that could happen? If I fail I’ll just blog about it!”

It actually turned out pretty well! We had my parents over and the quote of the night came from my Dad.

“You know what this sauce would be good in? A cup!”

The dish is a pork chop served over angel hair pasta with sauce poured over it. I don’t have angel hair pasta very often so this was a nice change up. The wine gave the sauce a really nice tang and it stuck to the pasta really well. It was even great reheated the next day! I can’t put into words how much I love crock pot meals. A good friend told me about sheet pan dinners. I’m going to look into that…

First blog post!!

 

Hello everyone!

I’m starting a blog! I’m a stay at home mom of a 10-month-old and I am excited to have something to work on. Now, what to blog about. As I was thinking about what I would write about I was making dinner for my husband. I was using a Pinterest recipe for butter chicken that I had never tried before and everything was going great. The kitchen smelled wonderful and I was starving! Excitedly, I sat down at the table to sink into my “has-to-be-delicious-if-it-smells-this-good” meal. This was the moment of truth. I put the first bite in my mouth.

“This literally tastes like water.”

How could something that smells so good have ZERO taste?! At this moment I realized, “Man, I need to get better at cooking.” (The naan was so good, though)

And so now begins my blog journey. I will be taking a trip through the highs and lows (there are many) of practicing and learning how to improve my cooking/baking skills. I’m excited to be able to rejoice in my successes and hopefully learn from and find some humor in sharing my failures with all of you.
